Sheep milk has more conjugated linoleic acid (CLA) than the milk from goats, cattle, and humans. CLA is a cancer-fighting, fat-reducing fat. The fat globules in sheep milk are smaller than the fat globules in cow's milk, making sheep milk more easily digested – lactose tolerable. To provide the best cheese and milk at Sheep Mountain Creamery, we have enlisted the help of two other farmlands: Woodrow Farms in Oregon and Sierra Mountain Farms in Montana. Lewis & Clark Brewery in Montana is assisting us with the production of our beer cheese.

Ewe Squeaky Cheese-Soft Cheese

The curds flavor is mild with the same firmness as cheese. Fresh curds squeak against the teeth when bitten into, a defining characteristic of this cheese.

Uses: Snack, browned in olive oil with a drizzle of honey or Balsamic Vinegar, crumbled in salads, pizza, top casseroles dishes, stuffed meatballs, and more.

Bryndza Cheese-Soft Cheese

Bryndza is a sheep’s milk cheese popular in several mountainous countries of Eastern Europe, especially in the Podhale region of Poland, Slovakia, Czech Republic, Romanian, Moldova, Serbia, Ukraine, Hungary, and parts of Moravia. The name Bryndza comes from “Wallachian”, the Romanian word for cheese. Bryndza cheese is creamy white in appearance.

Uses: The cheese is white, tangy, crumbly, and slightly moist. A soft, creamy spreadable artisan cheese. This cheese is like feta, it is good in salads or melted on pizza, good in Frittata’s, quiche, scrambled eggs, and more.

This cheese is brined in a dark roast coffee for over 2 weeks, then aged. This is a semi-soft cheese with a mild nutty taste blended with a hint of coffee. This cheese is excellent with fruit.

Timber Hill-Aged < 6 months

A variation of Asiago cheese; this cheese is in the Italian family of cheeses – comes from the Veneto and Trentino regions of Italy. This cheese provides a creamy, tangy, milky flavor with a soft texture. The aroma is slightly reminiscent of yogurt and butter. The texture and pale color reflect the shorter aging period. The flavor is sweet with a bright quality.

Uses: Shaved for salad, pizza, entrees and hors d’oeuvres, panini, hot or cold sandwiches, melted on top of casseroles or in cheese pasta dish or slice and just relax some crackers and a glass of light fruity or sweet wine. Excellent substitute cheese for Asiago, mild white cheddar, or sliced Swiss.
